Plant Based, dairy, egg and oil free
Ingredients
- 1 tbsp ground flaxseed
- 2-2 1/4 cups plant milk
- 1 1/2 cups whole wheat flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tbsp maple syrup
Instructions:
- 1. Mix flax and 1/4 cup of the milk in a little bowl.
- 2. Combine flour and baking powder in a separate bowl and stir.
- 3. Blend all ingredients together in a blender. Start with 2 cups of milk and then add more if it is too thick. It needs to be runny
- 4. Heat a pan over medium heat. I try not to use oil but it depends on the pan.
- 5. Pour 1/4 batter into the preheated skillet and tip the pan around until it runs to all of the edges.
- 6. Turn over when browned.
Toppings:
- blueberries
- raspberries
- strawberries
- bananas
- peanut butter
- sprinkle of nutmeg
- pure maple syrup
Chocolate Coconut Whipped Cream
- 1 can coconut cream
- 2 tablespoons unsweetened cocoa powder
- 2 T of natural peanut butter
- 2 T of pure maple syrup
- 1 tsp pure vanilla
You can whisk this altogether in a bowl or mix it in the mixer.
