Chickpea Salad Sandwich

This week I will share a different idea for lunches everyday. Chickpea Salad Sandwiches – This is a very simple lunch to put together. I don’t take too much time making lunches. I simply use leftovers or put something simple together like this. Substitute different ingredients if you are missing something.

Chickpea Salad:

  • 1 can of chickpeas rinsed and drained
  • 1/3 cup finely chopped dill pickles
  • 1/4 cup red onion finely chopped
  • 1 tablespoon stone ground mustard, Dijon or just mustard
  • 1 1/2 tsp apple cider vinegar
  • 1/4 tsp salt
  • 2 tsp dill week fresh chopped
  • 1/8 tsp turmeric
  • 8-10 grinds of fresh black pepper

Sandwich:

  • Multi-grain bread or pita of your choice
  • lettuce
  • tomatoes
  • Instructions:
  • 1. Mash the chickpeas
  • 2. Add all of the other ingredients.
  • 3. You can also put the filling into a romaine lettuce leaf for a lettuce wrap.
