This week I will share a different idea for lunches everyday. Chickpea Salad Sandwiches – This is a very simple lunch to put together. I don’t take too much time making lunches. I simply use leftovers or put something simple together like this. Substitute different ingredients if you are missing something.
Chickpea Salad:
- 1 can of chickpeas rinsed and drained
- 1/3 cup finely chopped dill pickles
- 1/4 cup red onion finely chopped
- 1 tablespoon stone ground mustard, Dijon or just mustard
- 1 1/2 tsp apple cider vinegar
- 1/4 tsp salt
- 2 tsp dill week fresh chopped
- 1/8 tsp turmeric
- 8-10 grinds of fresh black pepper
Sandwich:
- Multi-grain bread or pita of your choice
- lettuce
- tomatoes
- Instructions:
- 1. Mash the chickpeas
- 2. Add all of the other ingredients.
- 3. You can also put the filling into a romaine lettuce leaf for a lettuce wrap.
