Oatmeal Chocolate Chip Cookies
I have been making these for many years but have changed the recipe over the years. I have tried the recipe a few different ways to make them plant based but this time they turned out perfect. They are a family favorite.
Mix the wet ingredients together in the mixer:
2 Tablespoons natural peanut butter
1 cup unsweetened applesauce
1 Tablespoon plant milk or water
Mix the dry ingredients together in a separate bowl:
2 Cups flour
1 1/2 cups sugar ( I used organic sugar = less processed) or use coconut sugar
1 tsp baking soda
1 tsp salt
Add the dry to the wet ingredients.
Mix again then add:
1 tsp pure vanilla
2 cups of semi-sweet chocolate chips (dairy free)
2 cups of oats
1 cup of chopped walnuts (optional)
Mix well.
Use a cookie scoop and place on cookie sheet. Bake at 375 deg. For 8-10 minutes until just light brown on top. Do not over bake. They are best when taken out when they are still a little gooey. They will firm up when they cool but they will still be chewy.
