Pancakes-Gluten Free & Vegan

  • 6 Tablespoons ground flax seeds + 1 cup water
  • 1/3 cup applesauce
  • 3 cups almond milk
  • 1/3 cup maple syrup
  • 6 tsp baking powder
  • 3 tsp baking soda
  • 6 pinch salt
  • 1 Tablespoon pure vanilla
  • 3 cups Gluten Free Flour
In a large mixing bowl add flaxseed and water and let sit for a minute or two. Then add applesauce, maple syrup, baking soda, baking powder, salt, almond milk, vanilla extract and whisk until well combined. Next add flour and stir until just combined. Let batter rest for 5-10 minutes.
Lightly grease griddle and pour 1/4 cup measurements of the batter onto the griddle. When bubbles appear in the middle and edges turn slightly dry, flip. Cook for 1-2 minutes more on the other side and then top with fresh berries and maple coconut cream and/or natural peanut butter and enjoy life mini chocolate chips.
  • Maple Coconut Cream
  • 2 cups coconut cream
  • 6 tablespoons pure maple syrup
For coconut cream – whip coconut cream until light. Add maple syrup a little at a time to get to best flavor.
