- Steel Cut Oats
- Soaking the oats:
- 1 cup steel cut oats (not quick cooking)
- 3 cups warm water
- 1 Tablespoon acidic medium: lemon juice or apple cider vinegar
- Soaking Instructions:
- Soak steel cut oats in a bowl with warm water.
- Add acidic medium and stir to combine
- Soak for 8-24 hours at room temperature.
- For cooking:
- 1 cup water
- 1/4 tsp sea salt
- Cooking Instructions:
- Rinse the oats after soaking.
- Bring 1 cup of fresh water and salt to boil in a pan.
- Add oats and simmer on low.
- Cook for 3-5 minutes or until good texture, stirring occasionally.
- Serve hot with pure maple syrup, fresh or frozen berries, bananas, coconut sugar, cinnamon or nutmeg, plus some plant milk.
