Banana Muffins – plant based-whole wheat-oil free

Banana Chocolate Chip Muffins

2 cups whole wheat flour (I use sprouted WW flour)
1 cup sugar ( I use organic, less processed)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
3 medium ripe bananas (10.5 oz./300g)
1/2 cup non-dairy milk
3 Tbsp applesauce
1 Flax egg = 1 Tbsp flax + 3 Tbsp water
1 Tbsp apple cider vinegar
1 1/2 cups non dairy chocolate chips

Directions:

1. Preheat oven to 350 and spray a muffin tray or use muffin papers
2. Sift the flour into mixing bowl and mix sugar, baking powder, baking soda, salt & cinnamon.
3. Make flax egg and set aside
4. Blend the bananas, milk, applesauce, and pour over the dry ingredients.
5. Add the apple cider vinegar and flax egg
6. Add the chocolate chips
7. Divide the batter into the muffin pan.  Sprinkle chocolate chips on top.
8. Bake for 30 minutes.
