Scalloped Potato Soup

Ingredients:

  • 2 cloves garlic minced
  • 1 onion chopped or sliced
  • 3-4 carrots sliced
  • 6-8 potatoes sliced
  • 3 cups veggie broth
  • 3 tablespoons arrowroot powder or cornstarch
  • salt and pepper to taste

Instructions:

Saute garlic and onions then stir in the arrowroot powder and the broth. Add the remaining ingredients in the instant pot and use the slow cooker setting for 3-4 hours or manual setting for 14 minutes. You can also cook this just in a pot on the stove for about 45 minutes.
