I got this recipe from The McDougall program recipes. I make a pan of it and eat it at least one time a day for several days. It is such a wonderful combination of flavors. Apples, cinnamon and oats are all warm and delicious. I love to put a little coconut whip cream on top but it isn’t necessary. This can also be made with pears or peaches or berries! In the picture shown I used pears. It was really good.

4 large firm apples, peeled and sliced
1 tablespoon lemon juice
1/2 teaspoon cinnamon
3/4 cup grape nuts cereal
3/4 cup rolled oats
1/2 teaspoon cinnamon
1/2 cup maple syrup
2/3 cup apple juice
1 teaspoon cornstarch
Preheat oven to 350 degrees
Put the apple slices, lemon juice and cinnamon in the pan and stir together.
Mix grape nuts, oats, and cinnamon in a separate bowl. Stir in the maple syrup. Spread over the apples. Whisk the apple juice and cornstarch together, then pour it over the apples and topping. Bake for 40-50 minutes until apples are tender. Serve warm or cold.
