Chocolate Peanut Butter Cups
These are so simple and amazing. I make these more often than any other treat. Peanut butter and chocolate is my favorite. I have always loved peanut butter and chocolate but once I became plant based and then trying to make better treats with better ingredients, I came across this recipe that has made it so I can still have the treat! I love having these in the freezer and this one looks frozen solid because it is. They freeze really well and they are nice to have on hand when you need a tiny treat. I got this recipe from beamingbaker.com. I make it with a little revision with the topping. I like making it with the cocoa and maple syrup and peanut butter for the topping layer.
Peanut Butter Layer
1 cup natural, unsalted peanut butter
1/2 cup pure maple syrup
1/2 cup coconut flour
Chocolate Topping option 1
1/2 cup maple syrup
1/4-1/2 cup cocoa powder
1/2 cup unsalted natural peanut butter
Chocolate Topping option 2
1/2 cup unsalted natural peanut butter
1 cup vegan chocolate chips
Instructions
Line a square pan with parchment paper or I also like to use tiny mini muffin or candy sized papers in a mini muffin tin.
Mix ingredients for peanut layer together in a bowl. Press into parchment lined pan.
Make the chocolate topping. For both options mix the ingredients together, and warm in microwave or double boiler method. Put the chocolate topping on top of the peanut butter layer.
Place in the freezer. Once they are frozen I either cut them into squares or put the little cups and keep in a bucket in the freezer.
