Plant based, oil free, dairy free option.
These pumpkin blondies are amazing. I absolutely love making everything with pumpkin in the fall and sometimes other times of the year as well. I found this recipe on healthymaven.com. I made a few minor adjustments and they turned out just perfect.
Ingredients
2 cups flour ( i used sprouted whole wheat flour, use your choice of flour, you can also sub GF flour)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon sea salt
1 teaspoon pumpkin spice
1/2 cup coconut sugar or brown sugar or organic sugar
3/4 cup unsweetened almond milk
3/4 cup pumpkin puree
1 teaspoon pure vanilla
1/2 cup dairy free chocolate chips
Instructions:
Preheat oven to 350
Place parchment paper in 9×9 pan sprinkle flour on parchment paper
Mix together dry ingredients.
Combine all of the wet ingredients together in a separate bowl.
Add wet ingredients to dry ingredients and stir until well combined.
Stir in chocolate chips.
Spread batter evenly into pan.
Bake for 20-25 minutes
Let cool.
