Lunch Lady Peanut Butter Bars – I remember having these in the school cafeteria as i was growing up. I dont remember making them until several years ago. I used a recipe from sixsistersstuff.com and revised it to be plant based. My family loves these, even my son who is not a peanut butter fan. The rest of us are all peanut butter chocolate addicts.
Ingredients:
1st Layer:
1 cup applesauce (you can also use mashed banana or pear sauce)
2 cups sugar (i used coconut, or organic sugar or pure maple syrup or combination of these)
1 teaspoon pure vanilla extract
2 egg replacers (2 T ground flax seeds + 6 T water)
1 cup natural peanut butter
2 cups rolled oats
2 cups flour (I used sprouted whole wheat but use flour of your choice)
1 teaspoon baking soda
1 teaspoon salt
2nd Layer:
1 1/2 cups natural peanut butter
3rd Layer:
1/2 cup peanut butter
1/4 cup plant milk
2 teaspoons vanilla
1/4 cup unsweetened cocoa powder
3 cups unrefined powdered sugar (you can sub pure maple syrup amount to preferred sweetness)
Instructions:
- Preheat oven to 350
- Cream the peanut butter and apple sauce together.
- Add vanilla, egg replacer and mix together.
- Add oats, flour, baking soda, and salt and mix well.
- Prepare a 18×13 sheet pan
- Spread out dough in the pan in an even layer
- Drop the peanut butter on top of the warm bars and spread out when it melts.
- Let the peanut butter cool.
- Mix the frosting ingredients together until smooth and spread on top of the peanut butter.
- Cool then cut.
