Buckwheat Granola

Plant based, whole food plant based, oil free, vegan

This granola is so good. I got the recipe from Donna Kennett at Planted Life when I worked with her. Buckwheat is an ancient grain and it is gluten free. It has such a nutty flavor.

This recipe makes 30 servings.

Ingredients

  • 2 1/2 cups raw buckwheat groats
  • 2 1/2 cups GF rolled oats
  • 1 2/3 cups chopped raw nuts and seeds (any combination of any of those)
  • 1 cup unsweetened coconut flakes
  • 3/4 teaspoon salt
  • 1 1/4 teaspoon ground cinnamon
  • 3/4 cup maple syrup
  • 1/3 cup almond butter
  • 1/2 cup dried blueberries or fresh (dont add either before cooking)

Instructions

Preheat oven to 325 or prepare trays in a deyhdrator.

Combine all of the dry ingredients in a bowl.

Use a small pan on medium low heat to warm nut butter and maple syrup.

Pour over the dry ingredients and mix well.

Spread the granola on baking sheets or the dehydrator trays.

Bake for 25-30 minutes in the oven or in dehydrator on 110 degrees for 6-10 hours.
