Cashew Cheese Sauce

  • Cashew Cheese Sauce
  • 1 cup yellow potatoes
  • 1/4 cup peeled carrots
  • 1/3 cup chopped onion
  • 3/4 cup water from cooking veggies
  • 1/2 cup raw cashews
  • 1/4 cup coconut milk or other plant milk
  • 2 tablespoons nutritional yeast flakes
  • 1 T lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 pinch cayenne (optional)
  • 1 pinch paprika
  • Instructions:
  • 1. Cook vegetables in boiling water for about 10 minutes until soft.
  • 2. Remove veggies from water and put in blender, add 3/4 cup water from the pot along with the remaining ingredients.
  • 3. Blend until smooth.
  • Use this delicious creamy cheesy sauce on top of pasta or potatoes, as nacho cheese sauce.
