Coconut Cheesecake Ice cream

Ingredients

  • 3 cups full fat coconut milk
  • 3/4 cup raw whole cashews
  • 1/2 cup pure maple syrup
  • 1/4 cup fresh lemon juice
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon sea salt

Instructions:

  • 1. chill ice cream container
  • 2. soak cashews especially if you don’t have a high powered blender
  • 3. Put all ingredients into blender and blend for a few minutes until smooth.
  • 4, Pour it into the ice cream maker bucket and chill

Note: For Vanilla version just leave out the lemon juice.
