Ingredients
- 1 1/4 cup short or long grain rice
- 1 1/4 cup veggie broth
- 3/4 tsp salt
- pepper
- juice and zest of 1 large lime
- 2 Tablespoons chopped cilantro
- 1/4 teaspoon cumin
Instructions
Soak the rice in water and 1 T of apple cider vinegar for 24 hours. Rinse and Drain the rice. Add all of the ingredients into the instant pot. Set at manual for 23 minutes.
