Mashed Potatoes & Mushroom Gravy

Mashed potatoes and Mushroom Gravy – This is one of my absolute favorite comfort foods. This is one of those dinners that isn’t really a recipe. It is a dinner that I like to use from batch cooking. I put a bunch of Yukon gold potatoes and sweet potatoes in the instant pot with a few inches of water. I set it to manual for 13 minutes. The potatoes are perfectly tender. Be sure to do the side salad with fresh vegetables as half of your plate.

Mushroom Gravy

  • 1 onion finely chopped
  • 1/4 pound mushrooms, sliced
  • 2 1/4 cups cold water
  • 1-2 tablespoons soy sauce (coconut aminos is a great sub)
  • 3 tablespoons arrow root powder

Place the onions and mushrooms in a pan with 1/4 cold water. Cook and stir until very soft, about 5 minutes. Mix the remaining water with the soy sauce and arrowroot powder. Add to the pan and cook, stirring constantly until mixture boils and thickens.

Hints: Start out with less soy sauce and add more if you desire. Seasonings may also be added, such as parsley flakes, oregano, thyme and basil or just an Italian seasoning.
