In a large mixing bowl add flaxseed and water and let sit for a minute or two. Then add applesauce, maple syrup, baking soda, baking powder, salt, almond milk, vanilla extract and whisk until well combined. Next add flour and stir until just combined. Let batter rest for 5-10 minutes. Lightly grease griddle and pour 1/4 cup measurements of the batter onto the griddle. When bubbles appear in the middle and edges turn slightly dry, flip. Cook for 1-2 minutes more on the other side and then top with fresh berries and maple coconut cream and/or natural peanut butter and enjoy life mini chocolate chips. |
