- PB&J Oatmeal Bars
- 3/4 cup natural creamy peanut butter
- 1/2 cup sugar (I have also tried coconut sugar and pure maple syrup and they work great)
- 1 tablespoon vanilla extract
- 1 cup whole-wheat flour
- 1 cup oats
- 1/4 tsp salt
- 1 teaspoon baking soda
- 1/2 cup vanilla almond milk
- 3/4 cup strawberry jam or I blend fresh strawberries and add pure maple syrup to get 3/4 cup
- Instructions:
- Preheat oven to 350 degrees.
- Line an 8×8 baking dish with parchment paper
- Mix peanut butter and sugar together until fluffy
- Add in vanilla and mix.
- Add in flour, oats, salt and baking soda and mix. Slowly add almond milk and mix in until it forms a dough.
- Divide the dough and press 2/3 of the dough into bottom of the pan.
- Spread jam over the bottom crust.
- Crumble the remaining 1/3 of the dough and drop on top of the strawberry jam.
- Bake for 18-20 minutes until set and golden on top.
- Serve plain or with coconut whipped cream.
