PB&J Oatmeal Bars

  • PB&J Oatmeal Bars
  • 3/4 cup natural creamy peanut butter
  • 1/2 cup sugar (I have also tried coconut sugar and pure maple syrup and they work great)
  • 1 tablespoon vanilla extract
  • 1 cup whole-wheat flour
  • 1 cup oats
  • 1/4 tsp salt
  • 1 teaspoon baking soda
  • 1/2 cup vanilla almond milk
  • 3/4 cup strawberry jam or I blend fresh strawberries and add pure maple syrup to get 3/4 cup
  • Instructions:
  • Preheat oven to 350 degrees.
  • Line an 8×8 baking dish with parchment paper
  • Mix peanut butter and sugar together until fluffy
  • Add in vanilla and mix.
  • Add in flour, oats, salt and baking soda and mix. Slowly add almond milk and mix in until it forms a dough.
  • Divide the dough and press 2/3 of the dough into bottom of the pan.
  • Spread jam over the bottom crust.
  • Crumble the remaining 1/3 of the dough and drop on top of the strawberry jam.
  • Bake for 18-20 minutes until set and golden on top.
  • Serve plain or with coconut whipped cream.
