Potato Waffle
This is so simple! This is what a waffle iron and a cooked potato looks like. I like to batch cook and use an instant pot to cook a bunch of potatoes. I keep them in the fridge and then use them in different meals. I love this crispy potato waffle. Be sure not to take it out of the iron too early. It is done when it is crispy and holds together. If you open it and it is crumbly still then just close the iron and let it cook longer. Dip it in any of the sauces or dressings that I have posted on my blog or just some ketchup and Dijon.

So that’s literally just a potato?? Cooked in a super cool way? Awesome. Do you think it matters which type of potatoes you use?

I don’t think it matters. I always use Yukon gold potatoes because they taste so much better than russet potatoes. Remember that the potato does need to be cooked first and then you just smash it in the waffle iron.
