Pumpkin Pecan Pie Granola

Plant based, oil free

I got This recipe from Donna When i worked for her at Planted Life and I changed it just a little bit and I love It on top of a pumpkin pie green smoothie! It is so good!

Ingredients:

  • 4 cups rolled oats
  • 1 1/2 cups raw pecans
  • 1/2 cup raw pepitas (pumpkin seeds)
  • 1/2 teaspoon sea salt
  • 1 teaspoon pumpkin pie spice
  • 1 1/4 teaspoon cinnamon
  • 1/2 cup pure maple syrup
  • 1/2 cup pumpkin purée

preheat oven to 340

Mix all of the dry ingredients together in a large bowl. In a sauce pan on medium low heat warm the maple syrup and pumpkin purée. Pour over the dry ingredients and mix altogether! Spread the mixture evenly on 2 Baking sheets. Bake for 25 minutes.

Dehydrator method: I use an Excalibur and put parchment paper over the trays and then spread the granola on the trays. Dry for approximately 6 hours at 110 degrees until its dry and it will get more crispy as it cools off.
