Thai Salad Wraps

  • Tortillas
  • 3 cups cooked brown rice
  • 1/4 head green cabbage thinly sliced
  • 1/4 head red cabbage thinly sliced
  • 1/2 cup carrots grated thin
  • red peppers
  • 1/4 cup green onions sliced thin
  • 1/4 cup peanuts coarsely crushed
  • cilantro chopped
  • Toby’s Peanut Sauce
  • 1 large garlic clove (I used minced from a jar)
  • One 1-inch chunk fresh ginger
  • peeled and grated
  • 1/2 cup water
  • 1/2 cup natural peanut butter or almond butter
  • 2 Tablespoons sweet white miso
  • 1 Tablespoon low sodium tamari or soy sauce or coconut aminos
  • 3 Tablespoons fresh lime or lemon juice
  • Cayenne Pepper (optional)
  • 1-2 Tablespoons pure maple syrup
