Whole Wheat Crepes

Plant Based, dairy, egg and oil free

Ingredients

  • 1 tbsp ground flaxseed
  • 2-2 1/4 cups plant milk
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup

Instructions:

  • 1. Mix flax and 1/4 cup of the milk in a little bowl.
  • 2. Combine flour and baking powder in a separate bowl and stir.
  • 3. Blend all ingredients together in a blender. Start with 2 cups of milk and then add more if it is too thick. It needs to be runny
  • 4. Heat a pan over medium heat. I try not to use oil but it depends on the pan.
  • 5. Pour 1/4 batter into the preheated skillet and tip the pan around until it runs to all of the edges.
  • 6. Turn over when browned.

Toppings:

  • blueberries
  • raspberries
  • strawberries
  • bananas
  • peanut butter
  • sprinkle of nutmeg
  • pure maple syrup

Chocolate Coconut Whipped Cream

  • 1 can coconut cream
  • 2 tablespoons unsweetened cocoa powder
  • 2 T of natural peanut butter
  • 2 T of pure maple syrup
  • 1 tsp pure vanilla

You can whisk this altogether in a bowl or mix it in the mixer.
